Mrs Beeton'S Wine And Butter Sauce
|Butter||4 Ounce (125 Gram)|
|Plain flour||2 Teaspoon|
|Milk/Water||1⁄4 Pint (150 Milliliter)|
|Castor sugar||1 Tablespoon (Leveled)|
|Sherry/Port||1⁄4 Pint (150 Milliliter)|
|Grated nutmeg||To Taste|
Chop the butter into small pieces, put into a saucepan and sprinkle the flour over.
Add the milk or water and stir while bringing slowly to the boil, then stir in the sugar and wine.
As soon as it is well blended, add a little grated nutmeg and finely grated citrus rind (if used).
If there are lumps, strain the sauce.
