Fig Sauce For Meat Loaf Or Pork Roast
|Cornstarch||2 1⁄2 Teaspoon|
|Lemon juice||1 Tablespoon|
|Unsweetened pineapple juice||1 1⁄2 Cup (24 tbs)|
|Chopped dried figs||1 Cup (16 tbs)|
In a saucepan, combine cornstarch and lemon juice.
Gradually stir in pineapple juice and salt.
Bring mixture to a boil, stirring constantly.
Turn down heat and simmer for 5 minutes.
Stir in diced figs.
Simmer approximately a minute longer.
Remove from heat, add honey to taste, pour into sauceboat and serve with meat loaf or pork roast.
