Ingredients
  Shallots 55 Gram, chopped
  Vinegar 75 Milliliter
  Demi-glace 300 Milliliter
  Gherkins 30 Gram, chopped
  Capers 15 Gram, chopped
  Parsley 1 Teaspoon, chopped
Directions

1. Place vinegar and shallots in a small pan and reduce by half.
2. Add demiglace. Simmer 15 to 20 minutes.
3. Add the rest of the ingredients.
4. Skim and correct the seasoning.
