Rich Coffee Sauce
|Strong, hot black coffee||1⁄2 Cup (8 tbs) (Freshly Made)|
|Sugar||1⁄4 Cup (4 tbs)|
|Evaporated milk/Heavy cream||1⁄2 Cup (8 tbs), whipped|
1. Beat the eggs until light and thick.
2. Gradually add the hot coffee, beating constantly; stir in the sugar and salt. Cook the mixture in the upper part of a double boiler over boiling water until it thickens and coats the spoon. Let it cool.
3. Just before serving, fold in the whipped cream.
