Cucumber Sauce Sauce Aux Concombres

Ingredients
  Cucumber 55 Gram
  Cooked spinach 1 Tablespoon (From 30 Gram Raw)
  Seasoning 1⁄2 Teaspoon
  Butter 30 Gram
  White sauce 150 Milliliter
  Cream 75 Milliliter
Directions

1. Peel cucumber and cut into 2.5 cm. (1") slices. Soak in cold water.
2. Drain and saute in 15 gm. of butter with the lid on.
3. Pound well with spinach. Pass through a hair sieve.
4. Reheat along with the sauce. Add cream and seasoning.
