Chicken With Peanut Butter Sauce

Ingredients
  Chicken quarters 4
  Flour 2 Tablespoon
  Dry mustard 1 Teaspoon
For sauce
  Flour 2 Teaspoon
  Peanut butter 3 Tablespoon
  Chicken stock 1⁄2 Pint
  Worcestershire sauce 2 Teaspoon
  Lemon juice 2 Teaspoon
  Sugar 1 Teaspoon
  Salted peanuts 1 Ounce, chopped
  Watercress sprig 1 (For Garnish)
  Salt To Taste
  Pepper To Taste
Directions

Coat the chicken with flour, with mustard, salt and pepper added.
Shallow-fry in a covered pan for 30-40 min until tender.
Blend flour with peanut butter in a saucepan.
Add the stock gradually, stirring all the time.
Add Worcestershire sauce, lemon juice and sugar.
Bring to the boil and simmer for 1 min, stirring all the time.
Add peanuts and serve the sauce with the chicken.
Garnish with watercress.
