Baked Halibut With Herb Sauce

  Thin salt pork slices 4
  Onion 1 Small, sliced
  Bay leaf 1
  Halibut steaks 2 Pound
  Butter/Margarine / fat / salad oil 2 Tablespoon
  Flour 6 Tablespoon
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Soft bread crumbs 1⁄2 Cup (8 tbs)
  Melted butter/Margarine / fat / salad oil 1 Tablespoon
  Milk 1 1⁄2 Cup (24 tbs), evaporated
  Cayenne pepper 1 Dash

Place salt pork in the bottom of a greased baking dish; cover with sliced onion, bay leaf broken into small pieces, and halibut.
Work together with a spoon the butter, 3 tablesp of the flour, 1/2 teasp of the salt, and half the pepper; then spread on top of fish.
Combine bread crumbs and melted butter, and place on top of fish.
Bake in moderately hot oven of 375ºF for 50 min., or until done.
Then drain off fat from baking dish into a saucepan; stir in remaining 3 tablesp flour.
If mere is not enough fat, add 1 tablesp melted butter.
Stir in milk, remaining 1/2 teasp salt, remaining pepper, and cayenne.
Cook, stirring, until thickened.
Pour around the fish.
