Fluffy Pudding Sauce
|Granulated sugar||1⁄3 Cup (5.33 tbs)|
|Egg||1 , separated|
|Hot water||1⁄2 Cup (8 tbs)|
|Vanilla extract||3⁄4 Teaspoon|
Work the butter with the back of a spoon until soft and creamy.
Combine the sugar and flour, and work into the butter with a spoon.
Beat the egg yolk with a fork until thick, then stir into the first mixture; Place mixture in the top of a double boiler, and stir in the hot water.
Place over boiling water and cook, stirring constantly, until mixture thickens, about 6-8 min.
Remove from heat and cool.
Add the vanilla.
Beat egg white and salt together until egg white is stiff, then fold into the first mixture.
Serve at once with hot steamed or baked pudding, Gingerbread.
