Plum Sauce

Ingredients
  Fresh plums 10 , pitted and finely chopped
  Dried apricots 60 Milliliter, soaked in warm water for 1 hour and finely chopped (1/4 Cup)
  Chili pepper sauce 1 Teaspoon (5 Milliliter)
  Salt 1 Teaspoon (5 Milliliter)
  Water 45 Milliliter (3 Tablespoon)
  Sugar 125 Milliliter (1/2 Cup)
  Vinegar 125 Milliliter (1/2 Cup)
Directions

1 Place plums and apricots in a wok. Add chili pepper sauce, salt and water. Bring to a boil and simmer gently 15 minutes. Add a little more water if the mixture becomes too dry.
2 Stir in sugar and vinegar and simmer 20-30 minutes until the sauce reaches a chutney-like consistency. Pour sauce into a sterilized jar, cover and refrigerate when cool. This sauce will keep several months.
