Chasseur Sauce

Ingredients
  Button mushrooms 55 Gram, sliced
  Butter 30 Gram
  Shallots 15 Gram, chopped
  Demi-glace 300 Milliliter
  Tomatoes 115 Gram, concassed
  Chopped parsley 1⁄2 Teaspoon
  Chopped tarragon 1⁄2 Teaspoon
  Dry white wine 75 Milliliter
Directions

1. Melt the butter in a small pan.
2. Add chopped shallots and cook gently for 2 to 3 minutes without discolouration.
3. Add the mushrooms. Cover with a lid and cook gently for 2 to 3 minutes.
4. Strain off the fat.
5. Add the wine and reduce to half.
6. Add the tomatoes.
7. Add the demiglace. Simmer for 5 to 10 minutes.
8. Check for seasoning and add tarragon and parsley.
9. Serve with fried steaks, chops, chicken, etc., e.g. Noisette d' Agneau Chasseur.
