Port Wine Sauce For Ham
|Port wine||1⁄2 Cup (8 tbs)|
|Minced shallots||1 1⁄2 Teaspoon|
|Bay leaf||1⁄2 Small|
|Orange juice||3 Fluid Ounce (Juice Extracted From 1 Orange)|
|Lemon juice||1⁄2 Tablespoon (Juice Extracted From 1/2 Lemon)|
|Grated orange peel||1⁄4 Teaspoon|
|Consomme||1 Cup (16 tbs)|
Combine the port, shallots, thyme, and bay leaf, and simmer until the liquid is reduced by half.
Stir in the orange juice, lemon juice, and orange peel.
Mix a little of the consomme with the flour to make a paste.
Add the rest of the consomme to the saucepan, heat, and stir in the flour paste to thicken the sauce slightly.
Simmer 2-3 minutes before serving.
