Port Wine Sauce For Ham

Ingredients
  Port wine 1⁄2 Cup (8 tbs)
  Minced shallots 1 1⁄2 Teaspoon
  Thyme sprig 1
  Bay leaf 1⁄2 Small
  Orange juice 3 Fluid Ounce (Juice Extracted From 1 Orange)
  Lemon juice 1⁄2 Tablespoon (Juice Extracted From 1/2 Lemon)
  Grated orange peel 1⁄4 Teaspoon
  Consomme 1 Cup (16 tbs)
  Flour 1 Tablespoon
Directions

1.
Combine the port, shallots, thyme, and bay leaf, and simmer until the liquid is reduced by half.

Stir in the orange juice, lemon juice, and orange peel.
3.
Mix a little of the consomme with the flour to make a paste.
Add the rest of the consomme to the saucepan, heat, and stir in the flour paste to thicken the sauce slightly.
Simmer 2-3 minutes before serving.
