Simplified Brown Sauce
|Onion||1⁄4 Cup (4 tbs), minced (60 ml)|
|Sugar||1⁄2 Teaspoon (2 ml)|
|Butter||2 Tablespoon (30 ml)|
|Flour||2 Tablespoon (30 ml)|
|Beef consomme||2 Cup (32 tbs) (500 ml, canned)|
|Pepper||1⁄8 Teaspoon (0.5 ml)|
|Thyme||1⁄4 Teaspoon (1 ml)|
|Tomato paste||2 Teaspoon (10 ml)|
Cook the onion and the sugar in the butter for 5 minutes; stir in the flour and cook over low heat, stirring constantly until browned.
Gradually add the consomme, stirring until it reaches the boiling point.
Add the pepper, thyme, bay leaf and tomato paste.
Cook over low heat 20 minutes.
