Beef Burger With Orange Barbecue Sauce
|Onions||2 Medium, peeled and sliced|
|Orange juice||1⁄4 Pint (Fresh Or Canned)|
|Orange rind||1 Teaspoon, finely grated|
|Worcestershire sauce||1⁄2 Teaspoon|
|Wine vinegar||1 Tablespoon|
|Tomato puree||1 Tablespoon|
|Canned tomatoes||4 , drained|
|Ground black pepper||To Taste|
Brown the beefburgers and saute the onions gently in the oil.
Place in a casserole.
Make a roux with the butter and flour, add the orange juice, Worcestershire sauce, vinegar and tomato puree.
Cook well, stir in tomatoes and season well.
Pour into the casserole, cover and cook for 20 minutes.
Taste and adjust the seasoning before serving.
Decorate with blanched strips of orange rind, if liked.
Serve with baked potatoes and a crisp green salad with slices or segments of orange.
