Poached Pears with Strawberry Sauce
|Ripe pears||4 Large, peeled and cored|
|Apple juice||4 Cup (64 tbs)|
|Granulated sugar||2 Tablespoon|
|Orange rind||1 Teaspoon, freshly grated|
|Lemon rind||1⁄2 Teaspoon, freshly grated|
|Cloves||1⁄4 Teaspoon, ground|
|Strawberry sauce||1⁄4 Cup (4 tbs)|
From bottom of each pear cut a small slice so pears will sit upright.
In a large saucepan combine apple juice, sugar, cinnamon, orange rind, lemon rind and cloves.
Bring to a boil over medium heat; reduce heat.
Simmer for 5 minutes.
Add pears; cover.
Poach for 20 minutes or until pears are tender.
Let stand in poaching liquid until cool.
Refrigerate until serving time.
To dessert plates remove pears with a slotted spoon.
Drizzle Strawberry Sauce over pears.
Garnish with mint leaves.
