Poached Fries In Spicy Sauce

Ingredients
  Lamb fries 2 Pound, slit, rinsed and cut into 1 1/2-inch [4-cm.] cubes (soaked, peeled, salted for 5 minutes)

  Cayenne pepper 1 Teaspoon
  Cumin seeds 1⁄2 Teaspoon
  Cinnamon 1⁄4 Teaspoon, ground
  Butter 4 Tablespoon
  Salt To Taste
Directions

Put the cubed fries into a saucepan with the cayenne pepper, cumin seeds, cinnamon, butter and a little salt.
Cover the mixture with water and cook over medium heat until the fries are firm about 15 minutes.
Transfer the fries to a warmed serving dish.
Adjust the seasoning of the cooking liquid to taste and boil it until it is reduced to a thick sauce.
Pour the sauce over the fries and serve them at once.
