Pork Kidney In A Hot Sauce

Ingredients
  Pork kidney 1
  Cucumber 1 Small
  Garlic 2 Clove (10 gm), crushed
  Ginger 1 Teaspoon, grated
  Black pepper 1⁄2 Teaspoon
  Soy sauce 2 Tablespoon
  Sesame oil 1 Tablespoon
  Vinegar 1 Tablespoon
  Sugar 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Chilli oil 1⁄2 Teaspoon
Directions

Cut the kidney in half horizontally and remove the white membrane.
Score the outside of the kidney to a depth of half its thickness.
Then, holding the knife obliquely to the kidney, slice into long thin slices, against the grain.
Soak the slices in cold water for 10 minutes.
Cut the unpeeled cucumber into long thin slices.
Drop the kidney slices into boiling water for 20 seconds and then immediately rinse in cold water.
Pat the slices dry.
Arrange in a flat dish with the cucumber and pour over the seasoning sauce.
For a variation, omit the kidney, garlic and ginger.
Use the seasoning sauce with just the cucumber slices.
