Avocado With Chilli Tomato Sauce
|Firm ripe avocados||3|
|Lemon juice||3 Tablespoon|
|Chili sauce||3 Teaspoon|
|Finely chopped spring onion||2 Tablespoon|
|Mayonnaise||1⁄2 Cup (8 tbs)|
Cut avocados in half and remove the stones.
Sprinkle liberally with lemon juice to prevent discoloration.
Just before serving fill cavity with the sauce.
Sauce Peel, seed and finely chop the tomato.
Add chilli sauce, sugar and finely chopped spring onions and tomato to the mayonnaise.
Season to taste with salt.
Refrigerate for at least two hours before serving to allow the full flavour to develop.
