Mussels In Fresh Tomato Sauce

Ingredients
  Mussels 1 Kilogram
  Onion 1 , chopped
  Garlic 2 Clove (10 gm), crushed
  Oil 2 Tablespoon
  Ripe tomatoes 1 Kilogram, chopped
  Chicken stock 3⁄4 Cup (12 tbs)
  Dry white wine 1⁄2 Cup (8 tbs)
  Dried oregano leaves 1⁄2 Teaspoon
  Tomato paste 2 Tablespoon
  Chopped parsley 1⁄4 Cup (4 tbs)
Directions

Saute onion and garlic in oil until tender.
Add tomatoes, chicken stock, wine, oregano and tomato paste.
Bring to boil, reduce heat, simmer 30 minutes, covered.
Puree sauce or push through sieve.
Scrub mussels under cold water.
Return sauce to pan, place on barbecue, bring to boil, add mussels, cover, simmer 5 to 7 minutes or until mussels open; sprinkle with parsley.
