Sweet Corn Cakes With Dipping Sauce
|Sweetcorn||500 Gram, drained|
|Egg||1 (Plus 1 Egg White)|
|Coriander||1 Cup (16 tbs) (For Garnish)|
|Plain flour||125 Gram|
|Baking powder||1 Teaspoon|
|Ground black pepper||To Taste|
|Vegetable oil||2 Tablespoon|
|Salsa/Thai dipping sauce||1 Tablespoon|
Put all the ingredients (except for 100 g of the sweetcorn and the oil) in a blender and blend until smooth.
Mix the remaining corn in by hand.
Heat the oil in a frying pan.
Form large spoonfuls of the mix into patties and fry, 4 at a time, cooking for 2 minutes on each side.
Transfer to a serving plate, garnish with coriander and serve the Thai dipping sauce or salsa on the side.
