Jicama Dipping Sauce

Ingredients
  Salt 1⁄2 Teaspoon
  Dried sweet basil 1⁄2 Teaspoon
  Ground cumin 1⁄2 Teaspoon
  Dried oregano leaves 1⁄2 Teaspoon
  Black pepper 1⁄4 Teaspoon
  White pepper 1⁄4 Teaspoon
  Defatted chicken stock 1⁄2 Cup (8 tbs)
  Lime juice 2 Tablespoon
  Red wine vinegar 2 Tablespoon
  Lemon juice 1 1⁄2 Tablespoon
  Cilantro leaves 1⁄4 Cup (4 tbs), minced
  Jicama 1 1⁄2 Cup (24 tbs), diced
  Serrano peppers 2 , roasted, seeded, and medium diced
  Anaheim pepper 1 , roasted, seeded, and medium diced
  Poblano pepper 1 , roasted, seeded, and medium diced
  Diced leeks 1⁄2 Cup (8 tbs)

Directions

Combine the 6 dry ingredients in a bowl, add the chicken stock, and stir.
Add the lime juice, wine vinegar, and lemon juice, and stir again.
Add the remaining ingredients and stir until thoroughly blended.
