Bacon Tomato Sauce

  Bacon slices 5 , diced
  Chopped onions 3⁄4 Cup (12 tbs)
  Chopped celery 3⁄4 Cup (12 tbs)
  Carrots 3⁄4 Cup (12 tbs), diced
  Parsley sprigs 8
  Thyme leaves 1⁄2 Teaspoon
  Bay leaf 1
  Salt 3⁄4 Teaspoon
  Sugar 1⁄2 Teaspoon
  Garlic 2 Clove (10 gm), crushed
  Canned tomatoes 56 Ounce (1 Can, In Tomato Puree)
  Canned beef broth 21 Ounce (2 Can)

Cook the bacon in a large saucepan or Dutch oven for about 2 minutes.
Add the onions, celery and carrots and cook until onions are tender.
Stir in remaining ingredients and 2 cups water and simmer for 2 hours, stirring occasionally and adding water, if needed.
Press through a sieve or force through a food mill.
Add enough water to make 6 cups sauce.
