Sweet n Sour Sauce
|Canned pineapple chunks||13 1⁄2 Ounce (1 Can)|
|Cornstarch||1 1⁄2 Tablespoon|
|Vinegar||1⁄4 Cup (4 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Soy sauce||2 Teaspoon|
|Sliced green onions||1⁄2 Cup (8 tbs)|
|Green pepper||1⁄2 Cup (8 tbs), cut in 1/4-inch strips|
|Sliced celery||1 Cup (16 tbs)|
|Tomato||1 Large, cut into wedges|
|Blanched toasted almonds||1⁄4 Cup (4 tbs) (Salted)|
Drain the pineapple and reserve liquid.
Mix the cornstarch and water in a bowl until smooth.
Add reserved pineapple liquid, vinegar, sugar and soy sauce and pour over meatballs.
Bring to a boil and reduce heat.
Simmer for 20 minutes.
Add butter and stir until melted.
Add the pineapple, onion, green pepper, celery and tomato and stir lightly.
Cover and cook over low heat for 10 minutes longer.
Sprinkle with almonds and serve over rice, if desired.
