Green Beans In Egg Sauce

Ingredients
  Green beans 1 Pound
  Eggs 2
  Cider vinegar 2 Tablespoon
  Yellow onion 1⁄2 Small, peeled and finely chopped
  Garlic 1 Clove (5 gm), peeled and minced
  Salt 1⁄4 Teaspoon
  Black pepper 1⁄8 Teaspoon
Directions

1. Wash the beans and cut off the ends. Bring about 1 inch of lightly salted water to a boil in a 2-quart saucepan and add the beans. Cook, covered, for 8 minutes, or until crisp-tender. Drain, reserving 2 tablespoons of the cooking water. Return the beans to the pan and set over lowest heat.
2. Mix the eggs and vinegar in a bowl, add the reserved water, and beat the ingredients together with a fork.. Pour the mixture over the beans.
3. Add the onion, garlic, salt, and pepper, and stir until the beans are coated with the sauce.
