Basic Cheese Sauce
|Butter||3 Tablespoon, melted|
|Flour||1⁄4 Cup (4 tbs)|
|Milk||2 Cup (32 tbs)|
|Sharp american cheese||1⁄2 Pound, cut into 1/2 inch cubes|
|Lemon juice||1 Teaspoon|
Melt butter in top of double boiler over direct heat.
Blend in flour, add milk gradually and cook over boiling water until thick.
Stir constantly to keep smooth.
Add salt and cheese and cover and continue to cook over hot water until cheese is melted.
Stir in lemon juice.
Serve hot over toast with bacon or ham, or use as a cheese sauce for cooked vegetables.
