Cottage Cheese Fruit Blintzes
|Creamed cottage cheese||1 Cup (16 tbs)|
|Salad oil||2 Tablespoon|
|Sifted flour||1⁄4 Cup (4 tbs)|
|Raspberry jam||1⁄2 Cup (8 tbs)|
|Confectioners sugar||2 Tablespoon|
Beat eggs; beat in cottage cheese and oil.
Sift flour and salt together; add to cheese mixture.
Beat only until blended.
Grease griddle lightly with butter; drop batter from spoon onto griddle, making thin 4-inch cakes.
Bake until lightly browned on both sides.
Place 1 tablespoon jam in center of each cake; roll cakes around jam.
Sprinkle with confectioners' sugar; serve immediately.
