Chicken With Cheddar Sauce

  Finely chopped onion 1⁄2 Cup (8 tbs)
  Butter/Regular margarine 2 Tablespoon
  Canned condensed cream of chicken soup 10 3⁄4 Ounce (1 Can)
  Chopped pitted ripe olives 1⁄2 Cup (8 tbs)
  Finely chopped fresh parsley 3⁄4 Cup (12 tbs)
  Broiler fryer chicken 2 1⁄2 Pound, cut up
  Dairy sour cream 1 Cup (16 tbs)
  Shredded cheddar cheese 4 Ounce (1 Cup)
  Milk 2 Tablespoon
  Hot cooked rice 2 Cup (32 tbs)

Combine onion and butter in 4c. glass measuring cup.
Cover with waxed paper.
Microwave at high setting 4 minutes, or until onion is tender.
Stir in chicken soup, olives and parsley; set aside.
Arrange chicken in 12x8x2" (2qt.) glass baking dish, skin side down, and meatiest parts of chicken to outside of dish.
Cover with waxed paper.
Microwave at high setting 10 minutes.
Turn chicken over and move outside pieces to center of dish.
Spoon soup mixture over chicken.
Cover and microwave at high setting 8 to 10 minutes more, or until chicken is tender and meat near the bone is no longer pink.
Remove chicken and place on serving platter.
Blend sour cream, cheese and milk into sauce.
Microwave at high setting 2 minutes, or until cheese is melted.
Stir sauce and spoon some over chicken.
Serve chicken with hot rice and pass remaining sauce.
