Brandy Cream Sauce
|10% cream||1⁄2 Pint|
|Egg yolks||5 , beaten|
|Sugar||1⁄4 Cup (4 tbs)|
|Brandy||1⁄4 Cup (4 tbs)|
|Whipping cream||1⁄2 Pint|
Mix first four ingredients together in the top of a double boiler.
Cook and stir over hot, not boiling, water until mixture coats the spoon.
Remove from heat and stir in vanilla and brandy.
Cover and chill.
Fold in whipped cream just before serving.
