Chicken In White Sauce

Ingredients
  Vegetable oil spray 6
  Chicken pieces 3 1⁄2 Pound, skinned, all visible fat removed (About 12 Pieces)
  Port wine/Madeira / homemade chicken stock 1⁄4 Cup (4 tbs)
  Minced fresh sage/1 teaspoon dried sage 2 Tablespoon
  Minced fresh thyme/1 teaspoon dried thyme 2 Tablespoon
  Green onions with tops 3 , thinly sliced
  Finely chopped fresh parsley 1⁄4 Cup (4 tbs)
  Salt 1⁄4 Teaspoon
  Ground black pepper To Taste
  White sauce 1 1⁄2 Cup (24 tbs)
Directions

Preheat oven to 350° F.
Spray a nonstick skillet with vegetable oil spray.
Heat skillet over medium-high heat, add chicken pieces a few at a time and lightly brown on all sides.
Remove pieces to an ovenproof casserole or Dutch oven.
Repeat process with remaining chicken.
Pour wine or stock over warm chicken pieces, toss to cover and allow to stand for 10 minutes.
Mix herbs, onions, parsley and seasonings into White Sauce.
Pour over chicken pieces.
Cover and bake 45 to 60 minutes, or until chicken pieces are tender.
