Chicken In Tomato Wine Sauce

  Chicken 3 Pound, cut into serving pieces, skinned, all visible fat removed (1 Chicken, 2 1/2 To 3 Pound)
  Onion 1 , diced
  Garlic 1 Clove (5 gm), crushed
  No salt added tomato sauce 8 Ounce (1 Can)
  Hot water 1 Cup (16 tbs)
  Freshly ground black pepper 1⁄2 Teaspoon
  Fresh mushrooms 4 Ounce, sliced
  White wine 1⁄2 Cup (8 tbs)
  Fresh parsley sprig 4 (For Garnish)

Rinse chicken and pat dry.
Place all ingredients except mushrooms and wine in a stockpot over medium-high heat.
Bring to a boil, cover, reduce heat and simmer 45 minutes.
Add mushrooms and wine and cook 5 minutes more.
Garnish with parsley.
