Sausages In Onion Sauce
|Smoked sausage/Polish sausage||2 Pound|
|Bacon drippings/Margarine||2 Tablespoon|
|Onions||3 Large, sliced|
|Dry mustard||1 Teaspoon|
|Stale beer||1⁄2 Cup (8 tbs)|
|Bouillon/Consomm||1 1⁄4 Cup (20 tbs)|
|Black pepper||To Taste|
Cut sausage into 6 or 8 pieces and fry slowly in hot dripping, turning to lightly brown all sides.
Lift sausages from the pan and add the onions.
Stir-fry until they turn yellow, about 5 minutes.
Remove from heat and stir in the mustard and flour, then slowly add the beer and return to the heat.
Cook and stir until thick and smooth.
Add bouillon, sugar and several generous shakes of pepper.
Stir and simmer 2 or 3 minutes.
Add sausages and cover.
Turn heat low and simmer slowly for 30 to 40 minutes.
Taste for seasoning and serve with fluffy mashed potatoes that have been cooked with a few caraway or dill seeds.
