Rich Smooth All Purpose Sauce

Ingredients
  Soft butter 3 Tablespoon
  Flour 3 Tablespoon
  Scalded milk/A mixture of milk and a rich chicken / fish broth 2 Cup (32 tbs)
  Egg yolks 2 , slightly beaten
  Cream 2 Tablespoon
Directions

METHOD 1
Melt butter in a medium-size saucepan and stir in the flour with a whisk or wooden spoon.
Remove from heat and stir in the hot milk all at once.
Whisk to scrape all the butter mixture away from the pan, then return to medium heat.
Cook-stir until mixture comes to a boil and is smoothly thickened.
Whisk in egg yolks mixed with the cream and cook-stir rapidly, about 1 minute.
Season to taste.
Set over hot water and cover until needed.
METHOD 2
Scald milk in the top of a double boiler over boiling water.
Whisk in a smooth mixture of soft butter and flour.
Cook and stir until smoothly thickened.
Whisk in egg yolks mixed with cream and cook-stir 1 minute.
Season to taste.
