Beets In Orange Sauce

Ingredients
  Fresh beets 2 Pound
  Sugar 1 Tablespoon
  Cornstarch 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Fresh orange juice 2⁄3 Cup (10.67 tbs)
  Grated orange rind 2 Teaspoon
  Margarine 1 Teaspoon (acceptable)
  Orange 1 , peeled and divided into sections (for garnish)
Directions

Cook beets until tender.
Drain, peel and slice.
To prepare sauce, combine sugar, cornstarch and salt.
Slowly add orange juice and orange rind, stirring until smooth.
Cook over medium heat, stirring constantly, until thickened, 5 to 8 minutes.
Add margarine and stir until melted.
Pour sauce over warm beets, garnish with orange sections and serve.
