Beets In Orange Sauce
|Fresh beets||2 Pound|
|Fresh orange juice||2⁄3 Cup (10.67 tbs)|
|Grated orange rind||2 Teaspoon|
|Margarine||1 Teaspoon (acceptable)|
|Orange||1 , peeled and divided into sections (for garnish)|
Cook beets until tender.
Drain, peel and slice.
To prepare sauce, combine sugar, cornstarch and salt.
Slowly add orange juice and orange rind, stirring until smooth.
Cook over medium heat, stirring constantly, until thickened, 5 to 8 minutes.
Add margarine and stir until melted.
Pour sauce over warm beets, garnish with orange sections and serve.
