Herbed Tomato Coulis

Ingredients
  Sweet butter 2 Tablespoon
  Olive oil 2 Tablespoon
  Carrot 1 , finely chopped
  Onion 1 Medium, finely chopped
  Garlic 1 Clove (5 gm), finely chopped
  Tomatoes 2 Pound, peeled, finely chopped
  Rich beef stock 1 Cup (16 tbs)
  Dried thyme 1⁄2 Teaspoon
  Dried basil 1⁄2 Teaspoon
  Brown sugar 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  White pepper 1 Pinch
  Bay leaf 1
Directions

1. Preheat oven to 350°F (180°C).
2. In a large skillet, combine butter and oil; heat until butter melts.
3. Add carrot, onion and garlic. Saute 5 minutes, until onion is soft.
4. Stir in tomatoes and stock; bring to a boil.
5. Stir in thyme, basil, sugar, salt, pepper and bay leaf. Transfer to a casserole.
6. Bake for 1 hour and 30 minutes, until thick.
7. Cool. Remove and discard bay leaf.
8. Transfer sauce to container of blender or food processor; process 1 to 2 minutes until smooth
9. Store in refrigerator for up to 1 week.
