Tofu With Lloisin Sauce
|Red bell pepper strips||1⁄2 Cup (8 tbs)|
|Sliced celery||1⁄2 Cup (8 tbs)|
|Vegetable oil||1 1⁄2 Teaspoon|
|Minced pared ginger root||1 Teaspoon|
|Garlic clove||1 Small, minced|
|Dry sherry||2 Tablespoon|
|Hoisin sauce||2 Teaspoon|
|Reduced sodium soy sauce||1 Teaspoon|
|Chinese sesame oil||1⁄2 Teaspoon|
|Firm tofu||1⁄2 Pound, cut into cubes|
|Sliced scallions||1⁄2 Cup (8 tbs) (green onions, green portion only)|
1. In 1-quart microwavable casserole combine pepper, celery, oil, gingerroot, and garlic and stir to coat. Microwave on High (100%) for 2 minutes, stirring once halfway through cooking.
2. Add sherry, hoisin sauce, soy sauce, and sesame oil and stir to combine; microwave on High for 1 minute.
3. Add tofu and microwave on High for 1 minute; sprinkle with scallions.
