Tofu With Lloisin Sauce

Ingredients
  Red bell pepper strips 1⁄2 Cup (8 tbs)
  Sliced celery 1⁄2 Cup (8 tbs)
  Vegetable oil 1 1⁄2 Teaspoon
  Minced pared ginger root 1 Teaspoon
  Garlic clove 1 Small, minced
  Dry sherry 2 Tablespoon
  Hoisin sauce 2 Teaspoon
  Reduced sodium soy sauce 1 Teaspoon
  Chinese sesame oil 1⁄2 Teaspoon
  Firm tofu 1⁄2 Pound, cut into cubes
  Sliced scallions 1⁄2 Cup (8 tbs) (green onions, green portion only)
Directions

1. In 1-quart microwavable casserole combine pepper, celery, oil, gingerroot, and garlic and stir to coat. Microwave on High (100%) for 2 minutes, stirring once halfway through cooking.
2. Add sherry, hoisin sauce, soy sauce, and sesame oil and stir to combine; microwave on High for 1 minute.
3. Add tofu and microwave on High for 1 minute; sprinkle with scallions.
