Old Fashioned Fruit Sauce
|Ripe red tomatoes||4 Pound|
|Sweet red peppers||3|
|Vinegar||4 Cup (64 tbs)|
|Brown sugar/White sugar||4 Cup (64 tbs)|
|Mixed pickling spice||3 Ounce, tied in bag|
Peel and chop the tomatoes and peaches.
Core and chop pears and apples without peeling.
Dice onions, peppers and celery.
Mix all together in a large kettle with remaining ingredients.
Simmer uncovered until thick, stirring often to prevent sticking.
Cooking time will depend on the juiciness of the fruits, but allow about 1 1/2 to 2 hours.
Discard the bag.
Ladle into hot sterilized jars and seal.
