Pimento Cheese Sauce
|Chopped onion||2 Tablespoon|
|Milk||1 3⁄4 Cup (28 tbs)|
|Grated cheddar cheese||1⁄2 Cup (8 tbs)|
|Diced pimento||2 Tablespoon|
|Pimento juice||2 Tablespoon|
Saute onion in the melted butter until just golden.
Stir in flour, add milk gradually; cook and stir until smoothly thickened.
Add cheese, pimento and juice; season to taste with salt, pepper, cayenne.
