Chicken With Spiced Sauce

  Ground coriander 1⁄2 Teaspoon
  Chilli powder 1⁄2 Teaspoon
  Garam masala 1⁄2 Teaspoon
  Salt 1 Pinch
  Lemon 1 , juiced
  Natural yogurt 10 Fluid Ounce
  Ground ginger 1⁄2 Teaspoon
  Curry powder 1 Teaspoon
  Cayenne pepper 1 Tablespoon
  Garlic 1 Clove (5 gm), crushed
  Bay leaf 1
  Tomato paste 1 Tablespoon (Puree)
  Lemon 1 , rind grated
  Parsley sprigs 1
  Lemon slices 4
  Chicken breasts 4
  Oil 1⁄4 Cup (4 tbs) (For Shallow Frying)
  Sauce 1 Tablespoon

Combine the coriander, chilli powder, garam masala, salt and lemon juice.
Prick the chicken breasts all over with a fork and rub in the spice and lemon mixture.
Leave to marinate for 4-5 hours.
Drain the chicken pieces and fry them in oil over moderate heat until they are brown all over and cooked through.
Transfer to a serving dish and keep warm.
Meanwhile mix all the ingredients for the sauce and warm over a gentle heat, stirring constantly.
Remove the bay leaf and pour the sauce over the chicken portions.
