Steak In Wine Sauce
|Top round steak/Any other cut||1 1⁄2 Pound|
|Tomato paste||1⁄2 Cup (8 tbs) (Or More)|
|Chopped celery||1⁄2 Cup (8 tbs)|
|Minced parsley||1 Tablespoon|
|Sherry wine||To Taste|
|Onion||1 Large, chopped|
|Garlic||1 Clove (5 gm), chopped|
|Chopped mushrooms||1 Cup (16 tbs)|
Cut steak in serving pieces, lard and beat.
Brown in a heavy pan in butter.
In the drippings make a brown gravy by adding 1 teaspoon salt, 2 level tablespoons flour, blended and browned, with enough water added to make medium thick gravy.
Put steak and gravy in pressure cooker, add tomato paste, celery, parsley, onion, garlic, mushrooms, and wine; reseason with salt and pepper.
Cook in pressure cooker 10 minutes.
If steak is to be cooked in roaster, put all in and cover roaster with brown paper; then fit lid on closely.
This gives effect similar to that of pressure cooker.
(Test for tenderness after 15 minutes.)
