Fish With Zucchini And Red Sauce
|Fish fillets||1 Pound, cut into serving pieces (fresh or frozen (defrosted))|
|Tomato chili sauce||2 Tablespoon|
|Grated parmesan cheese||2 Tablespoon|
|Zucchini||2 Small, cut crosswise into 1/4-inch slices (about 1/2 pound)|
|Garlic salt||1⁄4 Teaspoon|
|Coarsely shredded carrot||1⁄4 Cup (4 tbs)|
1. Arrange fish with thickest parts to outside edge in 9-inch pie plate; sprinkle with salt. Cover tightly and microwave on high (100%) 3 minutes; drain.
2. Prepare Tomato-Chili Sauce. Spread 1 tablespoon of the sauce over each piece of fish; sprinkle with 1 tablespoon of the cheese. Arrange zucchini slices on fish; sprinkle with garlic salt and remaining cheese. Cover tightly and microwave on high (100%) until fish flakes easily with fork, 3 to 4 minutes. Top with shredded carrot and serve with remaining Tomato-Chili Sauce.
