Fish steaks/Fish fillets /4 to 6 cleaned small whole fish (6 to 10 oz. each)
2 Pound (fresh or thawed frozen)
Rinse fish and pat dry.
Place fish in a single layer in a greased baking pan just large enough to hold fish without crowding.
Pour sauce over fish.
Bake, uncovered, in a 375° oven until fish looks just slightly translucent or wet inside when cut in thickest part, 15 to 25 minutes.
Transfer fish to a warm platter; spoon sauce around it.
Season to taste with salt and pepper; garnish as directed with sauces.
