Spinach Sauce

Ingredients
  Butter/Margarine 2 Ounce (50 g)
  Frozen chopped spinach 8 Ounce (225 g)
  Milk 30 Milliliter (2 tablespoon)
  Ricotta cheese/Full fat soft cheese 8 Ounce (225 g)
  Parmesan cheese 1 Ounce, grated (25 g)
  Grated nutmeg 1⁄4 Teaspoon
  Cooked pasta 1 Cup (16 tbs)
Directions

1. Put the butter into a medium ovenproof glass bowl and microwave on HIGH for 1 minute until the butter is melted.
2. Add the frozen spinach to the melted butter and three-quarters cover the bowl with cling film. Microwave on HIGH for 5-6 minutes until the spinach is very hot, breaking up and stirring the spinach two or three times during the cooking time.
3. Stir the milk and the cheeses into the spinach and season well with salt, pepper and freshly grated nutmeg. Reduce the setting and microwave on LOW for 5 minutes, stirring frequently, until the spinach sauce is hot but not boiling. Serve the sauce with hot pasta.
