Freezer Onion Tomato Sauce

Ingredients
  Onions 3 Large, chopped
  Garlic 3 Clove (15 gm), crushed
  Olive oil/Vegetable oil 1⁄2 Cup (8 tbs)
  Tomatoes 5 Pound, peeled and quartered
  Chopped parsley 1⁄2 Cup (8 tbs)
  Green pepper 1 Medium, seeded and chopped
  Oregano leaf 1 Tablespoon
  Paprika 2 Teaspoon
  Rosemary 3⁄4 Teaspoon
  Salt 1 1⁄2 Teaspoon
  Pepper 3⁄4 Teaspoon
  Dry red wine 1 Cup (16 tbs)
  Water 1⁄2 Cup (8 tbs)
Directions

Saute onion and garlic in oil until tender.
Add tomatoes, parsley, green pepper, seasonings, wine, and water.
Simmer until thick, 1 1/2 to 2 hours.
Cool and pour into freezer containers, leaving 1/2 inch head space.
Freeze.
