|Sliced green onions||1⁄4 Cup (4 tbs)|
|All purpose flour||1⁄4 Cup (4 tbs)|
|Dry mustard||1⁄2 Teaspoon|
|Ground white pepper||1⁄4 Teaspoon|
|Skim milk||1 1⁄2 Cup (24 tbs)|
|Chablis/Other dry white wine||1⁄2 Cup (8 tbs)|
|Diced pimientos||4 Ounce, drained (1 Jar)|
|Crumbled roquefort cheese||1⁄4 Cup (4 tbs)|
Melt margarine in a saucepan over medium heat.
Add green onions, and saute until tender.
Stir in flour, dry mustard, and pepper; cook 1 minute.
Gradually add milk, stirring until smooth.
Cook over medium heat until thickened and bubbly, stirring constantly.
Gradually add wine, stirring constantly.
Cook an additional minute, stirring constantly.
Stir in pimiento and Roquefort cheese.
