Tuna Fish Sauce

Ingredients
  Onion 1 Small, skinned and finely chopped
  Garlic 2 Clove (10 gm), skinned and crushed
  Olive oil 60 Milliliter (4 Tablespoon)
  Anchovy fillets 4 , finely chopped
  Canned tomatoes 8 Ounce (1 Can /225 Grams)
  Canned tuna 7 Ounce, drained, flaked (1 Can / 220 Grams)
  Chopped fresh parsley 30 Milliliter (2 Tablespoon)
  Cooked pasta 1 Cup (16 tbs) (For Serving)
Directions

1. Mix together the onion, garlic and oil in an ovenproof glass bowl. Cover with cling film, pulling back one corner to vent, and microwave on HIGH for 3-4 minutes, stirring occasionally, until the onion softens.
2. Add the anchovy fillets and the tomatoes, with their juice, to the onion, mashing up the tomatoes with the spoon as they are stirred in. Three-quarters cover with cling film and microwave on HIGH for 5 minutes, stirring frequently.
3. Stir the tuna into the sauce and season well with salt and pepper. Microwave on HIGH for 5 minutes, stirring occasionally. Stir in the parsley and serve with hot pasta.
