Half Baked Sweet Potatoes With Lemon Butter Sauce
|Sweet potatoes||4 Medium|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Lemon juice||3 Tablespoon|
|Finely chopped fresh parsley||2 Tablespoon|
Wash and dry sweet potatoes.
Cut in half lengthwise; prick each with fork.
Place cut side down in greased shallow baking pan.
Bake at 400° for 35 to 40 minutes or until soft.
Melt butter in a small saucepan; stir in lemon juice, parsley, and salt.
