Fresh Red Chile Sauce
|New mexican red chiles||12 , roasted, peeled, stems and seeds removed|
|Garlic||2 Clove (10 gm)|
|Dried oregano||1⁄2 Teaspoon (Preferably Mexican)|
|Water||2 Cup (32 tbs)|
Place all the ingredients in a blender or food processor and puree until smooth, adding more water if necessary.
Sometimes fresh chiles will still have fibers after they are pureed; strain if a smoother sauce is desired.
Adjust the seasonings to taste, heat the sauce over medium heat, and serve.
Makes 2 1/2 cups.
