Peach Crepes With Easy Grand Marnier Sauce
|Low fat plain yogurt||1⁄2 Cup (8 tbs)|
|Maple syrup/Honey||1 Tablespoon|
|Peaches||3 , peeled and sliced|
|Orange juice||3⁄4 Cup (12 tbs)|
|Grand marnier/Drambuie / other orange liqueur||3 Tablespoon|
Grand Marnier Sauce: In saucepan, combine orange juice with cornstarch; whisk until smooth.
Cook over medium heat, stirring constantly, until mixture thickens and comes to boil; simmer for 2 minutes.
Remove from heat and stir in liqueur.
In bowl, combine yogurt with syrup or honey; stir until smooth.
Add peaches and mix lightly.
Wrap crepes in paper towels and heat in microwave at high (100%) power for 30 seconds.
Or heat in 350°F/180°C oven for 5 to 10 minutes or until warm.
Spoon some peach mixture onto each crepe; roll up and place on individual plates.
Drizzle with warm sauce and garnish with fresh fruit.
