Herbed Tomato Sauce
|Canned italian style tomatoes||112 Ounce (4 Can)|
|Tomato paste||12 Ounce (1 Large Can)|
|Dry red wine||1 Cup (16 tbs)|
|Basil leaves/2 tablespoons dried basil leaves||1⁄4 Cup (4 tbs), minced|
|Garlic||3 Clove (15 gm), minced or pressed|
|Minced rosemary leaves/1 teaspoon dried rosemary leaves||1 Tablespoon|
|Oregano leaves/2 teaspoons dried oregano leaves||1 Tablespoon, minced|
In a 5- to 6-quart pan, combine tomatoes and their liquid, tomato paste, red wine, basil, garlic, rosemary, and oregano.
Smash tomatoes into small chunks with a slotted spoon.
Bring to a boil over medium-high heat.
Simmer gently, uncovered, until the tomato sauce is reduced to 12 cups, about 45 minutes; stir occasionally.
