Roasted Tomato Sauce
|Ripe plum tomatoes||20 , cut in half (seeded)|
|Olive oil||3 Tablespoon (divided)|
|Fresh basil||1⁄3 Cup (5.33 tbs), minced|
Preheat oven to 450°F.
Toss tomatoes with 1 tablespoon oil and salt.
Place tomatoes, cut sides down, on nonstick baking sheet.
Bake 20 to 25 minutes or until skins are blistered.
Process tomatoes, remaining 2 tablespoons oil, basil and pepper in food processor until smooth.
