Spicy Chicken With Mango Sauce
|Chicken breast fillets||4|
|Garlic||1 Clove (5 gm), crushed|
|Lemon juice||1 Tablespoon|
|Grated fresh ginger||1 Teaspoon|
|Turmeric powder||1 Teaspoon|
|Cumin powder||1⁄2 Teaspoon|
|Mixed spice||1⁄4 Teaspoon|
|Cayenne pepper||1⁄4 Teaspoon|
|Garam masala||1⁄2 Teaspoon|
|Sour cream||2 Tablespoon|
|Mango ginger chutney||2 Tablespoon|
|Apricot jam||1 Tablespoon|
|Chicken stock||1⁄2 Cup (8 tbs)|
|Chokos||2 , peeled and sliced|
|Canned baby potatoes||440 Gram, drained (1 Can)|
1. Combine garlic, lemon juice, ginger, tumeric powder, cumin powder, spice, paprika, cayenne pepper, Garam masala and sour cream, brush chicken with mixture. Leave to stand for half hour
2. Combine sauce ingredients in small bowl, cook on HIGH for three minutes. Stir twice during cooking.
3. Place chicken on rack in shallow dish, cook on HIGH for ten minutes. Leave covered while cooking vegetables.
4. Slice chokos into eighths, place in shallow dish, dot with butter, cover, cook on HIGH for five to six minutes or until tender. Leave to stand covered. Place potatoes in shallow dish.
